This is the most amazing, delicious, and super nutritious raw organic vegan recipe i have concocted. In the raw food world there hasn't really been a “raw rice” available, so this one is very special and unique while being affordable. So far this is the ONLY rice I can soak overnight and the next day is sprouted, soft, tastes cooked and is out of this world delicious!
The story goes, in ancient times the Emperor of China discovered this special black rice and found out it had super nutrients and effects. Not wanting any competition and keeping all the special powers to himself he made it “forbidden” for anyone else to eat it but him.
Lotus Foods is the only source i have found for the most organic, all natural and fresh Organic Forbidden Black Rice. It truly is a super food and has as many antioxidants as blueberries and is regarded as a longevity super food in China that can prevent cancer and other diseases.
Serves: 3 to 4
1 bag Lotus Food Organic Forbidden Black Rice
Enough pure water to cover
Your favorite herbs and spices (I use turmeric, a little cayenne, Himalayan pink salt and chopped fresh organic parsley or cilantro)
1 large organic avocado
1/4 cup of hemp seeds
Organic lime juice, to taste
In a large glass or ceramic mixing bowl pour in entire package of Lotus Foods Organic Forbidden Rice. Or you can use 1/2 of the package but it is so good you will want to make the entire bag—trust me on this! After pouring the rice into the bowl fill with pure water until it covers the rice, plus about 1 inch. Then cover with a plate or to keep it clean and protected as it soaks. You can do this during the day but I like to do it right before I go to sleep at night then when I wake up it is finished and done and ready to eat!
After soaking it in a clean dry place covered and soaking in pure water for 10 to 12 hours you want to drain the water and rinse the rice well with new clean water then drain it fully so it is drier and not so wet. Then simply add the seasonings, mashed the avocado and mix with wooden spoon and serve!
Now, to give this amazingly nutritional salad some color and some unique flavors, add chopped celery, red cabbage, red bell peppers, chunks of mango, berries, mint, edamame or any vegetables, fruit that you want....Don't over due it and completely hide the wonderful flavor of the Forbidden Black Rice.......
You can also fill a red cabbage leaf or a collard green leaf with the mixture and make raw vegan tacos.......
You can also cook the Forbidden Black Rice if you choose not to soak it. It takes 30 minutes to simmer.......
